That's the real question, why do they still play on grass? Why did they ever play on grass? Hard surfaces have been available since tennis was invented. It seems much more difficult to me to cut grass close enough for a tennis ball to bounce off of.
Why do the English (or British) do anything? Why do they pour vinegar on their fried chips or drink warm beer? (Mind you the Scots eat haggis, yuck)
In a completely irrelevant fact, the original medieval tennis was essentially what we now call squash.
As for the grass used at the All England Tennis Club, it is know as Agrostis Stolonifera Garius Colemanius, it is specially breed to grow shorter than normal grass. The only problem is it is biased in favor/favour of anything associated with W (eg Williams or Wilson). It is very rare.
