I do 3 runs, 3 swims and a day off. I also do a push-up/crunches routine twice a week and a more thorough ab workout twice a week which happens to fall on my day off from aerobics. I'm 34 and will probably never be as fast as I was when I was 14 (4:56,11:00,17:52) but I enjoy being in shape and chasing my own "30's" PRs (5:27, 11:53, 19:53 + some swimming goals). Total hobby jogger here. :) But more to your point, I think the day off makes me feel rested and, coupled with the cross training, helps me remain uninjured. I used to be quite stress fracture prone on a stupid high mileage program at my high school which is probably one of the reasons my PR'S at 1600m+ didn't progress past my freshman year.
You can run 7 days a week only if you are intelligent enough to take easy, slow days. Take a complete day off every couple weeks though.
If you are one of those people who don't understand the concept of rest, and go all-out every run, the six days a week is enough.
0 to 1 days off per week during the meaningful part of any training cycle. In the heaviest portion of a training cycle, particularly for the marathon, it would not be unusual for me to go 5 or 6 weeks without a day off.
That being said, I would normally only run harder than comfortable conversational pace 2 days per week. What essentially happens is that when I am running high mileage, my default daily run is 10 miles most days, and a 6 mile day is the equivalent of a day off.

My kids tend to go all out on every run, so I have to make them take time off. This year, they have learned to run under control a little more.
I run 7 days a week, i take my easy days easy which is the most important and often overlooked run. Imo, at least 75% of your week should be easy conversational running. Personally, I only take a day off from running if 1). There's a hurricane outside and no power to run on the treadmill. 2). If I'm really feeling like crap or on the verge of an overuse injury. 3). If life creates an unexpected scenario and have to take off. If I feel fine and just some residual soreness you bet I'm running. If i was planning a tempo and starting to feel like crap during the warm up and into the first 400m of the tempo I'll bail on the workout and just run easy. Tomorrow is another day.

I really believe in the need for a weekly day off, but sometimes neglect to do so. I insist that my kids take one off, though.
I almost always take 1 day off. Sometimes 2 or even 3 if i really need them though
If we are being honest, most of my reluctance to take a day off revolves less around my desire to run or hit a specific mileage goal, and more around my desire to manage my weight.
I prefer 7 days, but one good thing about planning a six day week is that you have more chances to get the work done if you unexpectedly miss a day due to illness, travel, etc.
