I'm used to running 6 days per week with one test day. Should I get rid of this rest day when doing SOM? Also, I've never done doubled before. Should I just start with doubles 5 days a week or build up to that slowly?

Always build up to doubles slowly. Try 2-3 days firlst, very easy, then build.

Start with 1 day of doubles. Add a day each week until you're up to doubles 5 x week. SOM doesn't preclude taking one day off a week.
