Well she wears the Escalante (which is indeed responsive--I've worn it numerous times) and it serves her well. "Too soft for interval training" is not true.

What is your sizing in Escalante's? and Altras in general compared to traditional Brooks, Asics etc

I wear a size 11 in most shoes (Brooks, Nike, Mizuno), and some Altras but I wear a 10.5 in the Escalante. Hope this helps
Thank you... going to incorporate a few runs/wk in the Altra Instinct 4s with my Brooks Launch. If anything I think Altras would work well for squats/lunges/plyos

Altras work best for everything, over any shoe. Same goes for anything zero-drop. IMO. But running in Altras is just the best thing ever, I'll never go back.
