Is it worth it to add some HIIT sessions such as 15x30 seconds at 100% with 20 seconds recovery say 3x a week on top of traditional workouts + easy running?
Impossible to do that at 100% or perhaps Bolt could run 10 world records in one session

Yes they are. Cut the rest to 15 seconds though, should be 2:1 ratio

3 x 20 secs 100% with 30 secs rest is what you mean

Yes, but not more than once a week. Otherwise you risk burnout and injury. Scratch that. You don't risk it, you ensure it.
