Personally, I think it would be really great if they would add Cross Country running to the Winter Olympics. For one, it would give some of the African nations a fantastic opportunity to compete at, and be represented in, the Winter Olympics.
Cross Country running could maybe have 2 (or 3 distances) - a short course (6-8km) and a long course (12-15km) - along with maybe 2 relays - I'd like to see something along the lines of 4x 5km and maybe something that's mixed - a team made up of 2 male & 2 female runners. For the third possible race, maybe they could feature a 3km "sprint".
Of course, in true XC fashion, countries could enter a full team, or just a couple high quality individuals. I would also not be opposed to some obstacles scattered throughout the course - a creek crossing, small stone wall to hurdle, a few haybales - along with ditches, rolling hills, some switchbacks, and at least one fairly steep climb.
