If you spend ten dollars per day on food that is only 3,650 dollars per year on food. That sounds better than 1,500 dollars per year on food.

Not sure if he's an athlete or not but the video was requested that he do $30 or less for a week of food.
I think he did a decent job. I could probably live off that much food per week. Maybe I'd get a little more rice, pasta, and bananas though.
I believe you can eat well as a vegan, or vegetarian or whatever on $30 a week or less, and get enough good nutrition and calories to run 70-90 miles a week.
I have been doing this for many years.
The believe the guy in the video did well to consider the price of everything he bought. He bought a wide variety of healthy foods.
He could have saved more money if he bought things in bulk (rice, pasta, dried beans, flour to make pancakes instead of pre made waffles, even cases of canned goods, etc). Add in some other bulk items (oats, PB, other grains) and you can easily save more money while adding lots of additional calories in the form of complex carbohydrates.
As long as you do not overdo it, sugar, molasses, cane syrup etc. is a cheap way to get extra calories for running.
Yes cooking things like beans, pancakes, etc takes more time than just opening a can. But if you prepare bulk batches, get your system worked out, and freeze extra the time spent is minimized and you save more.
If you are doing this with other people (spouse, significant other, group of other runners living together) and sharing costs and food prep it is easier.

That's 61 lbs of yellow bananas. That's about 3,500 calories a day. Sounds good to me.

Exactly. He bought one brick of tofu for a week? Way too little amount of protein. And I'd trade all the canned goods for more greens, etc. The rice made sense but where's the oats or buckwheat? But one avocado for a week? I'm not vegan but I'm 101% sure vegans eat need to eat more than one avocado per week.
Beans, brown rice and kale are practically free at the store. And probably the healthiest food you can eat.

Yes, I generally spend more than the $30/week that he did in this video but I don't eat tofu everyday though. I usually eat one block a week and I eat it in 2 servings. So twice a week for dinner in stir fry.
But tofu isn't the only form of protein he has; the cans of beans are very cheap and high in protein. Beans and rice is a cheap and simple form of protein and carbs.
And you're right, I'm sure the majority of vegans eat way more than this but the point of the video was to show how much you could get for $30/week. Oats would have been a good way to go for a cheap easy breakfast too.
Most of that is canned stuff. That can't be that healthy.
Easy replace meat and dairy with starch .. potato rice beans pasta etc
Add in some fresh fruit and veggies and that's it. I spend Very little money on food (except for beer)
You get what you pay for. The guy is eating crap but does it cheap.
