I believe Scherer said a few hundred bucks, plus, I'm sure, expenses.

If they were good enough to win the race they would not be rabbits. (It's usually athletes past their racing prime that take the rabbitting job.)

In fact, the rabbit really has no ability to force the pace if there is no chance of this. If the field wants to sit and kick, and they are absolutely sure that the rabbit is going to stop running at 800m, what incentive do they have to go with him?
Sure, the rabbit may not be the same caliber athlete as the rest of the field, but the competitors still know that if they go out in 2:05 while the rabbit gets through 800m in 1:56, reeling him back in might be tough.
Not applicable to races where the competitors are looking to run a fast time and elect to have rabbits for that purpose, but this is relevant if the meet is choosing to use rabbits for the purpose of forcing fast races.

They are not necessarily passed their prime. They simply specialize in shorter distances than the race distance they are pacing. That is why most drop out.

I believe Matt Scherer had said at one point that he would get paid roughly the same amount as a 3rd or 4th place guy. but Matt was basically a pro rabbit so I'm sure he got paid more than other rabbits.
Look at the bigger picture. Our sport is so secretive when it comes to distance runner and track & field athlete compensation. Why?
We know what an NHL, NBA, MLB, NFL or PGA player makes. In many cases, we know their contracts, but when it comes to the running world, mums the word. We can only guess. Of course, major road races will list their prize money payouts and DL track events will do the same. However, we have no clue what a Galen Rupp makes or a Matt Centrowitz Jr makes per year. I read somewhere that a Usain Bolt makes $20M per year, but he's a celebrity and a worldwide superstars with endorsements everywhere.
More openness is needed.
