Brown rice produces less gas than pasta.
Quinoa might work
use the sauce but put it on a salad with lots of cheese, tomatoes and mushrooms.
Brown rice pasta instead of regular maybe? I find I don't get bloated from it like regular pasta. Sweet potatoes are great pre race fuel too
Rice Select Brand has a number of blends they call royal blend. Mixture of Brown Rice, Quinoa, Freekah and Flax
Gnocchi is pretty low fiber. I have it with a pesto sauce that I make from those little paper packets, so I can have it make it with very little olive oil. Pretty bland, but it doesn't sit in my stomach.
If you're carboloading the right way, you shouldn't eat that much in terms of total volume the day before a race. You should just have a diet that's mostly carbs, but with modest quantities.
