I figure the military performed exercises in training. Also walking has always been considered a pleasurable activity. Though these people also thought goat's blood transfusions were a good idea.
There was no concept of "exercise". Fit rich people recreated by riding horses, hunting, playing games, jousting, practicing with the sword, etc. Peasants kept fit through the harshness of working for a living.
People who competed in things like archery, jousting, or the ancient olympics trained, but didn't think about the energy used (calories burned) component at all.
I have worked at a working class factory job and we would consider doing "exercise" while off work as being laughable.
"Exercise" was an invention of the leisure class. People in the middle ages worked for a living.
Well there was Yoga.
And Henry the VIII did Crossfit and banged a lot of chicks.
They mostly just did muscle ups and flipped tires and stuff. Broscience was the law of the land.

You are correct, Sir. I had a factory job one summer in college and the thought of a six miler after work was, indeed laughable after being on my feet on con rete for nine hours.
Also people died by age 35 or so so no need to plan for retirement.
Henry the 8 the also did burpees after dinner.

Au contraire! This period produced the 3 crop fielding system and the horse drawn plow, both increasing the fat belly of the farmer. This was the crumble of the exercise period. In the iron ages they lifted many weights of globular iron. This is when weight rooms were first installed in castles via the pulley and chain system and made quite a good pump for the king's men. Though, the isolation of whey protein for recovery wasn't discovered for centuries.
