Biggest things:
1. Masa and a tortilla press.
2. Cotija cheese crumbled over slaw cabbage.
minus the pickled onions add fresh guacamole.
Ariba ariba.
Drive to your local Home Depot.
Hire a couple of migrant workers who are hanging out in the parking lot.
Get them prepare it 4 different ways and then have your white dinner guests vote on the best style.

Get yourself a squirrel gun and hunt some fat ones.
Set the slow cooker on low and throw that squirrel in with taters and carrots and red wine and let it slide off the bone and serve over a bed of chill cheese flavored fritos and add cheese and jalapenos on top. Serve with a chilled glass of Shlitz and we're cooking #woodlandtacos
We make tacos often , both soft and fried in the shell and dripping with oil. Today was halibut fish tacos. Usually I am not trying to beat the best street tacos just east some good dinner. Often slow cooked regular pot roast or carnitas from a recipe easily found online. Don't over think it just make some good tasting meat , pork, beef ,chicken, fish , that tastes good and some tomatoes, onions, cilantro and guacamole , what ever you want. Side with beans.
For beans take on or two cans refried with some kind of spice and one plain black beans not smashed, Dump them all in a pot and you have seasoned beans with great texture. Looks pretty authentic for taco stand beans and tastes great.
Fried tortillas are easy, always corn , put the meat in first or fill after. Soft tacos corn or flower tortillas.
I learned how to cook Mexican food from a former girlfriend, Posole, Enchiladas, Fettucine con salsa de poblano con crema, Carnitas, ceviche….all good stuff!
