How often should core be done and how much is enough? I have been doing 3 sets of one front plank and two side planks all for a minute, about 4 x a week.

more, trust me
What sort of racing requires you to do this move? Are you doing those gimmick races where you have to crawl under live wires?
I think 4x a week is plenty, but you could probably add some other exercises like sit-ups.
if you feel that regular plank is too easy for you, you can go for more advanced variations, such as superman plank,
http://www.plankpose.com/core-killer-superman-plank/
you can also add glute bridge, bird-dog and other body weight core strengthen workouts. By the way, are you sure that your plank technique is good enough ?
Less abs and more hip/glute work is the key I believe. Most runners don't have weak abdominals but most runners do have weak glutes, low back and upper back musculature. I do hip stuff daily. I found doing too much ab work just made them too fatigued for when I ran and caused me to arch my low back too much.
"Core" is a scam. Your body doesn't have a core, it's not an apple.
A loaded barbell squat is a better core exercise than planks.
Alan
If you have the time to waste on "core exercises," run more. Run uneven surfaces like dirt trails. That's more effective than doing planks.
All-out sprints are great for your "core" too.

Too true. Hurdle mobility and other hip work goes way further than boring old core. Also planks are a waste of time. Do something dynamic.
Google Stuart McGill, Mike Robertson, Mike Boyle , Alan Cosgrove and others who will give you better advice. Learn what you need to be healthy now and in the future.
Yes do planks, glute bridges, bird dogs between sets when doing other strength exercises.
Every day
