So recently I cut my foot open really deep(non-running related and no stitches). Need to stay in good shape for upcoming races. I can't put much pressure on it without lots of pain. What do I do? Bike?

Steve Prefontaine set an AR at 3 miles in the 1970 NCAA finals with 6 stitches in his right foot. Sock got a little bloody, no big deal
I cant put ANY weight on it without extreme pain. It's very swollen.

Just stay off it until you can run. If you need to do something to keep from going crazy, do some sit-ups.
Take this as an opportunity do lots of yoga for isometric strengh which will make you faster and more resistant when healed.
Also if you can, do eliptical work , and if you can also bike or similar low foot impact sports.
If its really deep do not be stupid and do something that will make it worst or make it slooooooow to heal.
This can be gold for areas of your training you have ignoring like, isometric strenght etc.
