Since there are very few road races shorter than 5k, what do former middle distance runners do once they're done with college? Do they usually move up in distance? Compete unattached in college meets? Quit?

They move to a special enclave in Alaska for people who don't like xc all that much. In the enclave its never fall!
It depends if they run the mile or if they run shorter distance. There are tons of mile races out there - with prize money - if you look. You can definitely run open track meets and stay on the college schedule regardless of distance you run.
They're not a homogeneous group. Some quit and become ex- jock couch potatoes. Others hobby jog road races. I know a former college sprinter that hobby jogs marathons. You don't have to focus on your college event for the rest of your life.

Yes, they all do one of those three.
A rare few do something weird, like pick up a completely unrelated event (say pole vault) and compete unattached, just for fun.
Wake up, get in the shower and rub one out. Rinse and repeat.
