First of all, using the outdated term "classy" is basically an indicator that you have no, umm, class. This would make one worry that anything you write in a note of appreciation might, likewise, lack the quality with which you wish to convey your message. Be very careful, thoughtful and conservative in your communication.
But, yes, you are right in questioning your own intentions. Aside from the common acts of hospitality they displayed, did you girlfriend's parents go the extra mile? Meaning, were you and your girlfriend allowed to sleep in the same bed? When you awoke in the morning, did her dad give you a knowing "nudge...nudge...wink...wink" and ask how you slept? Did her mom give you a sly grin and suggest that you both were probably hungry enough to devour a mountain of pancakes?
