7 x 800m at 2:40 with 3:00 jog recovery.
Running ~ 45-50 mpw currently
Any thoughts?

I would see that as a 3k pace workout - 3:20/km pace (5:20/mile) --> 10:00

More like 17:50-18:00
I did 5x 3 min pieces coming through 2:35 in the 800 and only ran 17:33.
Then again I'm more of a mid d guy.

Reasonable. I was going to add that my 17:30 estimate was contingent on aerobic development :)
Was the rest interval so long so you could practice getting in your car and driving to the next timing mat?

honestly thats a lot of rest. try to do the same workout with 60s rest for a more accurate estimation. by this workout alone i would say 18:15-20. I don't see you breaking 18 by that workout. Of course i can be wrong.
