I would suggest if you are taking off 1-2 days a week from running, the best way to keep getting better is going to be doing some type of strengthening workout.
I would incorporate a workout with a high weight, low reps and 5-7 sets (increasing weight), and a continuous 15-20 minute cycle of 3-4 exercises that work various muscle groups.
Ex) Dead lift for the first part 5-7 sets starting at an easy repping weight working up to weight were you can only do 3-4 reps in a set. Then do a circuit workout of 10 lunges, 10 burpees, 5 pull-ups and 10 leg lifts for 10-20 minutes.
If you want better response to the workouts, you gotta keep changing the stimulus, so look around and find stuff if you are serious.
If you want to be really fast, you are going to have to run 7 days a week and fit these into types of workouts into your schedule. I was able to run 5-6 days a week, do a couple workouts like this an be in 52 min 10 mile/ 71 1/2 marathon shape without doing any running workouts.

I go to the health and do 3x 20 minute swedish triathlon. Sauna, steam room and hot tub. Seriously, it rejuvenates the body and gets you ready for the next week. All work and no play makes jack a slow/sore boy.

wtf? I know many pros who take off sundays. they just go extremely high volume on those 6 days often doing triples to make up for a day of
I currently run 6 days a week (rehabbing from injury). On the off day, I add in a bit of weights to my usual set of PT exercises. Other than that, I kick my feet up and relax.
Whenever I do crossfitting, my glutes hurt so bad that it interferes with my running for the next 2-3 days.

Definitely not true. Almost all professional long distance runners (let's say 5000 and up, but probably most milers too) run every single day with a few exceptions ... they're hurt, traveling, sick, run-down, downtime between seasons, or just the rare scheduled off day.
Ryan Hall got a lot of criticism when he started taking a day off every week. And I think we all know how that worked out for him ...
