No one is going to laugh at a customer, they just might not be able to do it.
You would likely need to grind off the old outsole and then attach the new one. It can be done, but I doubt most shoe repair places could get the new outsole.
You couldn’t remove the outsole from most modern running shoes intact, and I don’t know of any manufacturers who will sell them independently.
If you’re not totally set on a specific outsole, there may be options, but it would really depend on who was doing the work and what they can get.
Also remember that the outsole can affect the performance of a shoe. It might change the weight and flexibility. This my make the shoe better, but it might also make it worse. Every shoe has to make some compromises and trying to combine them can create new issues.
