6x800s at 2:14 with 3 min rest
What would these workouts put me at for a 1 or 2 mile?
I feel comfortable during so am i getting to much time in between

Why don't you try cutting down your splits? 2 min rest on 400s is fine but I would want them to be faster at the end. last 3 under 60 seconds,
Same with the 800s. for a mile workout, start at 2:14 and cut down to 2:04.
You would only need to do 4 of them at that pace.
Sub 9? Ive raced one meet this season and ran a 9:21 but not sure if im there yet. And i follow my coaches recovery times
I would say sub 9 if you are running 70mpw and have the strengh
You are no way near 9 but maybe 10 in 2 mil
no, he's not quite in sub-9 shape. if the rest had been about 2 minutes, i would agree, but it was 3 minutes.

Do you think i can get there i have 12 weeks left in season? If i ran that workout with 2 min recovery. What time do you think right now
You don't know that he's not in 9 min shape because he felt comfortable (not all-out) in the workout. For D1/elite athletes, the workouts would be 12-15X400 with 1 min and 6X1000 with 2-2:30.
But consider that it's March not May. One way to proceed would be to keep the same pace but gradually cut the rest down until you can run the workout on time.
I would say to stick with the with 2 mile over the mile because seems like you have more strengh
