So I haven't run in a week, because I've had the flu. I had it really bad, and pretty much just stayed in bed the entire week. I'm planning on starting to run again tomorrow, but wondering how much fitness I've lost. Any thoughts?

You need to find a race within the next 8 days. You will run a pr. While the muscles of your legs were resting, your body was fighting off a potentially deadly foe. Once that foe has been vanquished, your body, mind, and spirit will be in a supercompensated state and prime to run faster than you have ever done in your life.

This logic is sound. You can even step up in distance since your body can obviously handle the extra stress and I bet you'll surprise yourself.
In numerical terms, the answer to the OPs question is 42 fitness units. 42 is pretty much the answer to all important questions in life.
Depends on the type of flu. I had one in HS that sounds like yours. I went from a 9:30 3200 to not being able to run faster than 10:11 for the next 4 weeks through all the big meets of that season. I remember the first day back I jogged 3 miles and felt ok. My second day back I tried 8. The second half of the 8 included significant walking...
On the other hand, if you have to do it, it is kind of the best time of year to lose fitness.

It sounds like you had the 'real' flu. Take an extra week off. Your body is incredibly stressed still. Guaranteed.
You will not gain anything by training hard in the next two weeks. You will only lose fitness by training.
Let your body recover fully. Give yourself 4-5 extra days of easy running before you try anything hard. Nothing longer than 2-3 miles.

None or very little. Your body was completely run down, your resistance low, you got flu, you rested, you needed the rest to avoid death. You recovered, ease your way back into running. You survived, many have died.
