It seems like wicking fabrics work by wicking moisture away from the skin but are there any fabrics that transport heat away from the skin instead?

I'd go with cotton. It is a natural fiber. Cotton breathes, you see, it's much softer. Imagine running and you're five degrees cooler than the other athletes. Don't you think that would be an advantage? You're cooler, you're more comfortable...you're happier - you're gonna run better.
The act of evaporation is what removes heat from the body. The wicking fabrics enhance evaporation. Cotton holds onto moisture and would not be a great choice for heat removal.
That seems so familiar... Seinfeld?

adidas claims that 'Climachill' carries heat away from the body
Sugoi 'Titan Ice' makes the same claim - if i remember correctly, wicks heat away when wet - i remember guys wearing long sleeve tops at Boston in the extreme heat

The Adidas climachill stuff seems to work better form me than the Nike dry-fit stuff at wicking away moisture/heat. I think it's because the fabric in the climachill stuff is a lot thinner and more perforated than the nike stuff. Underarmour's stuff was inferior to Nike's stuff, in my experience.
What would you like it to wick? Secretions?
