I've got flexible flat foot and ankle issues. Going to ditch the orthotics and try running my easy recovery run on grass wearing something like the NB minimus shoes? What do you guys think?? I'd go barefoot but I'd probably get frostbite.

Easy runs? Probably too much volume. Doubles? That's probably more like it.
Keep your mileage low. Like, pick a number you think is incredibly low. Do less than that. Start getting out for a mile or MAYBE two, on soft soft surfaces, and build from there. Since a mile or two is very little aerobic benefit and is just good for easy recovery as a double, it should be the right amount to start with.
my recovery runs are 4-6 miles usually 10 miles a day splint in two.
What's an ideal surface?
There are a couple of options for grass surfaces close to my place. One is a track a mile away and the other is a soccer field a block away but the surface is packed and uneven. If I do the track, then I either have to run a couple miles on asphalt/concrete or run in regular shoes and carry the minimal shoes to change in.
