Yes. Some people have celiac disease and it's really dangerous for them to eat gluten. My boyfriend is one of them; he suffers from intestinal damage from years of eating gluten, was diagnosed with celiac disease after a colonoscopy and blood testing.
Not everyone who is gluten-free has celiac disease obviously but this fad has made his life a LOT easier by restaurants that are more likely to cater to people who are on a gluten-free diet, whether by fad or by necessity.
I'd argue the opposite.
My one friend who is actually celiac has had more issues recently than in the past with getting gluten at restaurants because they assure him that everything is on the level. Before it was trendy he was able to just order what he could eat. Now the servers first reaction (and it's statistically justified) is that this person is just on a diet. Less need to take care then than with a real medical concern.
I tried it- for no real reason and felt a lot better.

I eat pretty healthy anyway but I just feel a lot better.
I really just avoid wheat which for some people is just not good. I had cronic canker sores my entire life and after giving up wheat the cankers went away, my skin cleared up and I too felt less bloated. A lot could be said for giving up beer having a lot to do with it and I agree. I used to drink 1-2 beers a day with the occasional 4-5. When bread is brought to the table I have no desires. Every now and then I'll have a non GF pizza or a burger and I'm fine the next day or so but within 3 days I start getting cankers again.
To the OP, why do you care? All the restaurants adding a GF menu I promise you aren't doing it because it's a fad. If it is a fad it's been going on a long time. Is a vegan diet just a fad?
