do 60 miles on your Mon-Sat morning runs, and 5 miles in the evenings doubles 3x a week for 75 miles. Then sleep in on Sunday and/or to church.
So I'd do something like:
M- 8/5
T- 10/5
W- 12
T- 8
F- 10/5
S- 12
S- rest
I don't take days off, but thank you for the info
And by the way:
I have 2 workouts a week
And a long run consisting of 13-14 milrs

For my doubles in the arvo i usually just run for 40 mins. This means you just run by feel and you can't over do it because you're limited by the time (I usually get between 4.5-6 miles depending on how fatigued I am from the mornings session)
75mi/week is really low to be running doubles. Especially that many of them.

Disagree. It is all personal to the runner.
Depending on the workout in the morning, I'd suggest making your run 4-5mi long. Four miles slow if you are particularly hurting, 5mi if you have a decent set of legs on you still.
If you are running the double and your legs feel like junk at first, you'd be surprised that a lot of times you shake out and end up feeling pretty good by the end of the run.
For supplemental doubles, always start slow, and work up to your usual pace towards the end of the run. Doubles aren't the place to do workouts. Save the intensity for the more substantial runs.
75 mpw is NOT low to be running doubles for a HS with only a few years running and whose races are 5k max.
