An easy run the next day is often done by folks. At least get out and walk around. Now getting back to serious training will take longer for most folks.
Depends on the person (obviously). If you were running 80+ mpw during your buildup, then I would not expect you to need to take a day completely off. You should take it easy for a week or so though. I ran everyday and then PRed in a half 2 weeks after my first sub 2:40, so you don't have to "rest" as long as some people would lead you to believe.
Take a full 7 days off. Then run on Monday.
This is what Nick Arcinaga does, and he's only doing 5-6 mile easy runs initially.

Is that a full 7 days without any activity? Or is it 7 days of no running, but okay to do cross-training?
