I normally run 6x a week with Sunday off. Is it better to only take rest days every two weeks, or should I stick with this?

People vary. I always feel better when I run on Saturdays (normally my off day), as it prepares me for my Sunday long run. Kenyans have been known to run at 9-10 minute pace for miles, even when Canova told them to just take that morning off, they would just say it makes them feel better. Find what works for you and experiment.
I say take off when you are feeling tired or something is bothering you. Or maybe you just don't have time to run that day. Aside from a planned break from training, I look at single days off as unplanned. I like to schedule a short slow run (or 2 short slow runs in one day), even if I'm feeling great, once every 7-10 days though.
