Left smoked salmon out for about 4 hours--can I eat it? 4/22/2012 9:57AM Reply | Return to Index | Report Post
Went shopping this morning and bought smoked salmon. Picked it up in the grocery store at about 11am. Came home to watch the london marathon and completely forgot about the salmon until after the men's race finished around 3pm. The salmon was unopened, but was at room temperature for about 4 hours. It is smoked salmon too, so that means it was already cooked (I think?) Is it safe to eat?

thanks.

I'm an old guy from Brooklyn with years of experience. It's perfectly safe up to about 12-14 hours. However, most likely it's not high quality smoked salmon. If you want first-rate stuff, order from Zabar's in New York.

Don't take any chances. Throw it out and go get more. Best to be safe than sorry!

I'm a microbiologist and if the salmon was prepared correctly (brined for 8-10 hours and then smoked), you should be fine. The high salt concentration of the brine will prevent growth of pathogens. The whole point of Native Americans smoking salmon is to preserve it in the absence of refrigeration.

You could leave smoked fish out for a week. Just hold your nose when you eat it, defuses the taste changes.

If salmon is still alive and communicating with you, it is all good. If salmon is dead, well, maybe the cat already had it.

as for this, in case you couldn't tell by my time descriptions concerning the london marathon, I am located no where near newyork, but if I ever happen to find myself there, I will be sure to pass by zabar's since I love good salmon.

merci à tous

toxines may kick late (at the end of the week). Sue the shop
where you bought them if you fall ill. Might be fortune there.
