Not T&F, but Dave Scott, who won the Hawaii Ironman Triathlon mnany times and set a lot of tri records in his day, is a vegetarian. He ran a 2:41 marathon at the end of Hawaii one year.
I know of a hammer thrower that missed having meat for one of his meals once, so he was a vegan for a few hours.

In his intro remarks of Jannequin Bennett's book Very Vegetarain, Carl wrote that he became vegan in July of 1990.
WC Gold- 100m(a WR of 9.86, PB), 1991.
WC Silver- LJ, 1991 (outstanding competiton w/ Mike Powell)
O Gold- LJ, 1992 & 1996 (a fluke?)
WC Bronze- 200m 1993
Those marks and results are very competitive.
