You can accomplish shooting yourself in the foot by going too hard.
Whatever fitness you've built by the last week is what it is. The goal should be to maximize the chances you run at the high end of possible outcomes.
To do this, I'd recommend running 5/7 days before the race, with one VERY SHORT workout at race pace. For a 5k, something like 5 x 400 @ 5k pace with a lap jog recovery, MAYBE a little faster on the last one for confidence-building. Do this no later than Tuesday for a Saturday race. The rest of the days, just go for 30-40 minutes easy. It's usually a bad idea to take off the day before entirely. Do at least 3-4 miles. If possible, I'd probably jog the course the day before -- it's about the right distance, and it will help you figure out what to expect.
