When I was in grade 8, the distance I had to run was 3k, in grade 7 I think it was about 2.3k or something.
Girls had to run about a mile in grade 7 and maybe 2k in grade 8... Lots of road races for younger kids that age usually are at 2.5 or 3k. I'd say it's a fair distance.
2.62 miles, or 4.22 km. Call it a 1/10 marathon. Get marathon into the name!
1.5 miles to 3k is the typical distance for that age group, although USATF-JO uses 4k for 12-13 year olds.
Try to keep the course all on grass, if you can.
I have two big fields with a combined perimeter of 800m. Very spectator friendly. Two medium hills and a longer gradual downhill.
Just make a 2 mile course and it sounds like you're set. You may want to avoid 4 loops of the same course if possible, though.
Could you somehow make figure 8 loops? That might be more interesting and you might be able to make a two-mile out of just three loops.
Depends on what your goals are for this type race. Are you looking for very good runners with talent to help you develop a top team in high school or just for participation to help you get the numbers (mass participation).
The shorter the better for mass participation. But if you want to see/develop better runners then go somewhere from 3k to 5k in distance.

Why?
Grass, dirt or trail. As long as it doesn't include concrete or black top.
It's supposed to be a cross country race, not a road race, that's why.
I'm going to give a long answer:
I grew up in a town with a pretty successful High School XC and Track program. I ran my first XC season in the third grade, in a league of local towns administered by the Rec League.
Race distances went as follows:
1st and 2nd grade- 1/2 mile
3rd and 4th grade- 3/4 mile
5th and 6th grade- 1 mile
For the Rec League we practiced on Mondays and Fridays and raced on Wednesdays.
In Middle School, the school district took over administration of the XC team. The distance at that level was two miles. We practiced every weekday we didn't have a meet; we had one or two meets per week.
I know this is more than you asked for, and a lot of it is kind of tangential, but I hope the OP (or someone) finds it at least somewhat useful.
In middle school we ran the 3k for the first half of the season. Around state and county we switched over to the 4k. Either of those should be pretty good. Unless you want a faster race and you could go with a 1 or 2 miler.
It's all 3k in our area. But we've got teams and an organized schedule. We train from Aug. 1 and finish mid October. Is this race for teams at these two schools or just a one time thing? If they haven't been doing any training and it's not a team thing, I'd do a mile run or maybe a 2k. Check with the PE or fitness instructors and see if they have fitness testing (mile run) data.
