I know a guy who's boss bought his own private island off the coast of Alaska. Doesn't the owner of Virgin Records own his own islands in the Carribean? I'm sure you could do the same, that is if you have a shit-ton of money.
The answers are almost certainly yes - uninhabited and yes - some sort of satellite internet should be possible.
The real problem is not finding islands that are uninhabited, but finding ones where there are no territorial claims by some country or exiting land owners.
