Not so. Breading makes things more tasty, especially when seasoned.
Frying is a great method for fish, because fish has a lot of water in it. Water and hot frying oil oppose each other. The result is moisture staying in the meat rather than escaping.
Just make sure your oil is hot enough, or else oil will seep into the fish and then it will ruin it.

Mrs M...you should have realized there are a lot of teens and early twenty something males on here...not a lot of forward thinking...and generally very rude. Hopefully there is better treatment of the fisheries in NZ so the Hoki doesn't become endangered due to our desire for filet-o-fish.

Back when I was a manager 20 years ago, I believe they used cod. There will always be a cheap white fish for them to use. The world isn't going to run out of fish anytime soon.
I LOVED to eat ONE filet of fish. If I had that 2nd one though, I would feel bad for hours. Too much grease and tarter sauce for one meal.
