As far as geography goes, it's okay. Not as much forrest area around K-Falls city, but if you travel less than half an hour west you'll be in the middle of several mountain lakes, which all have good trails to run.
K-Falls as a city is pretty slow, but that might be just what you're looking for.
The running community is not strong. There are a few races. The biggest is the Crater Lake Marathon (with a half and 10k) in August.
What is the draw to K-Falls? There are more desirable areas in Southern Oregon with more developed running communities.
The draws are, smaller town or rural area, medium sunshine all year, relatively arid climate (not humid), quiet, clean air and water, minimum of prejudice, reasonable prices for housing.

I can agree with most of what you've said except for the minimum of prejudice. K-Falls is definitely devloping into a region of well-off and not so well off people. The biggest form of prejudice that I'm aware of is toward the Native Americans and Hispanics. There's been a few incidents in the news recently of harassing behaviors stemming from bigotry.
That is sad.

Nothing against Klamath Falls, but I personally find the Ashland / Medford / Yreka areas much more desirable...

One thing I want to especially get away from is the marine layer near the coast, I don't want to be too close to the coast.
Southern Oregon is becoming quite the retirement area. Oregon has no sales tax, low crime rate, etc. The down side is that with the growth of a retired population there has been some difficulty passing bonds to pay for schools, libraries, etc.
Make sure to check out Scott Valley, 20 miles outside of Yreka. One of the undiscovered outdoor gems in CA.

My fiancé and I have job offers there, and we are planning to check it out in the next week or so.
Any insight on the running community, trails, and/or the town in general would be great.

I wouldn't consider it a good place for someone young like yourself. It's a very slow, old town.
