A more interesting question is which world record holders never even competed in the Olympics?

Dutch Warmerdam was pretty much the Bubka of the bamboo era. First over 15 feet and dominated the sport for several years. He held the WR for 17 years!
WW2 accounted for his empty olympic resume.

100m
Leroy Burrell
Calvin Smith
Tim Montgomery
Asafa Powell
None of these 100m WR holders have an Olympic Gold or a World Championship Gold at 100m.
Paula Radcliffe - Gold Medal at 2005 World Championships
Wilson Kipketer - 3 Gold Medals at 1995,1997,1999 World Championships
Butch Reynolds - Gold medal in 4x4, world championships 400m
Daniel Komen - Gold Medal in 5000m in 1997 world championships.
Mary Decker
Cheryl Bridges
Ingrid
Grete
Miki Gorman
To be fair, many of the runners listed have won World/European/Commonwealth golds (when euro/commonwealth meant something), which are obviously a notch below Olympic gold but still pretty good. Mary Decker won the 15/3k in '83, Komen won the 5k in '97, Bannister won the mile and 1500 in '54, etc.

In their WR event was not a part of the original question. Calvin Smith has a 4x100m gold medal from the (1984) Olympics and three gold medals at the World Championships (1983 and 87 in 200m and 4x100 in 83)
Burrell has an Olympic Gold medal and two WC gold medals (all 4x100)
Tim Montgomery was stripped of his world record. He had relay golds in an Olympics and a world champsionship. I don't believe those have been stripped. He never qualified for the 100m.
Asafa Powell has both an olympic and world championships gold medal.

Yep. And before I replied I looked to see OP was Olympic gold specific
Ron Clarke, kannouchi (Marathon runner, broke the marathon world record twice)

Shin Geum Dan (or Sin Kim Dan) of North Korea. Gunder Hägg & Arne Andersson
Salazar's "record" was removed from the lists, as it was a short course.

Wes Santee (1500 meters for 17 days).
