I'm running a half marathon on a hilly course next weekend. I've been running 30-50 miles a week since November and have been doing speedwork since March. Some examples of workouts I've done are 6 x 1600 @ 5:40 with 2:30 rest (yeah, that was probably too long of a rest period), 20 x 400 @ 1:15 with 1 minute rest and 5 minutes hard/easy mix for an hour. Today, I ran 10 miles in 1:03 which felt hard, but I think I could have held that pace for a few more miles. My prs are 5:07 for 1600, 17:07 for 5k, and 39:00 (didn't race hard at all) for 10k. Do you think I can break 1:25?

If your 17:07 is recent and reflects your current shape, sub 1:25 should be on (depends on how hilly the course is). I would not do any further long workouts before the race, perhaps something like 6x1200 at target pace on Tuesday (with 2 min rest, this should not feel too hard), and some short intervals on Thursday, if the race is on Sunday.
